Carvone (±) (CAS 99-49-0) is a monoterpene ketone found in spearmint and caraway oils; in racemic form it provides a balanced cool mint–caraway aroma and is widely used as a flavor in chewing gum, confectionery, beverages, baked goods, toothpaste, and mouthwash, as well as a fresh herbal top note in perfumery, soaps, detergents, and air-care products; in post-harvest agriculture, carvone—especially the (+) enantiomer—is employed to suppress sprouting in stored potatoes, with the racemate sometimes chosen when a cost–performance compromise is acceptable; it has also been explored as a botanical insect repellent and antimicrobial for use in food packaging or natural preservative systems; in chemistry and materials, carvone serves as a renewable terpene building block for stereoselective synthesis of monoterpenoids, epoxy/oxime/imine derivatives and organic ligands, and for polymer modification and green-solvent research; in laboratories and education it is a classic demonstration of chirality via the odor difference of its enantiomers and a reference for chiral chromatographic separations; in pharmaceuticals and oral care it is used as an excipient/penetration enhancer, flavor mask, and adjunct for plaque-odor control owing to mild antimicrobial activity; it is generally safe at flavor-use levels (e.g., GRAS in the U.S.) but can irritate skin/eyes and is oxidation-prone, so store tightly closed, cool, and protected from light.
