Applications
Dihydrocarvone (CAS 5948-04-9) is a monoterpene ketone with minty, herbaceous, slightly camphoraceous notes that is widely used across flavor and fragrance: dosed directly as a fresh top-note ingredient in fine fragrance, soaps, detergents and personal care; employed as a flavoring for confectionery, chewing gum, beverages and oral-care where it delivers a softer, less biting cooling than menthol; and leveraged as a versatile intermediate to make dihydrocarvyl esters (acetate, propionate, etc.), dihydrocarveol and other p-menthane derivatives for perfumery, as well as a convenient cyclohexanone scaffold in organic synthesis of pharmaceutical and agrochemical targets and in studies of selective catalysis (hydrogenation, epoxidation, Baeyer-Villiger to lactones); it is also used as a GC-MS reference/calibration standard for monoterpene ketones, and because it occurs as cis/trans stereoisomers (often supplied as technical mixtures) the isomer ratio can be tuned to modulate odor character for specific industrial applications.
