6-Methyl-5-hepten-2-one, commonly called sulcatone (CAS 110-93-0), is a branched aliphatic ketone with a distinctive lemon-peel odour, making it widely employed in the flavour and fragrance industry for citrus, lemongrass and green notes in perfumes, soaps, detergents, air fresheners and personal-care products, and it is authorised as a flavour modifier for beverages, confectionery and processed foods; beyond sensory uses, the compound serves as a versatile intermediate in the synthesis of vitamin E, vitamin B1, carotenoids, terpenoid pesticides and other fine chemicals, acting as a valuable building block for Aldol, Michael and photochemical reactions in organic research; notably, sulcatone occurs naturally in human sweat and breath and is a key olfactory cue enabling Aedes aegypti mosquitoes to locate hosts, so it is exploited in trap lures, repellents and chemical-ecology studies, while its presence in fruits, vegetables, coffee and biofuels also makes it a useful analytical standard for quality control, spoilage monitoring, ripeness assessment and studies on fuel volatilisation.
