Applications
Apiole (parsley) (CAS 523-80-8) is a natural phenylpropanoid found in parsley seed and leaf essential oils, used mainly as a flavor and fragrance ingredient imparting warm spicy–herbal notes to foods, beverages, and perfumes, and as a GC–MS reference standard for identification, quantification, quality control of parsley oils and adulteration screening; in research it serves as a benchmark compound and a scaffold/starting material in organic synthesis, has been investigated for antimicrobial, antioxidant, and insecticidal/repellent effects that can support botanical preservation, yet its direct use is constrained by dose-dependent hepato-, nephro-, and neurotoxicity, so it is typically applied only at very low levels, within natural matrices, and under applicable safety regulations.
