Applications
Methylheptenone (CAS 409-02-9) is a volatile branched-chain ketone widely used in perfumery to impart fresh citrus, green and slightly fruity notes to fine fragrances, soaps, detergents, deodorizers and personal-care products; with good blending behavior, it is also dosed at trace levels as a flavor modifier in beverages, confectionery, dairy/fat applications and nature-identical flavors, and serves as a versatile intermediate for preparing odorant building blocks and terpenoid derivatives via Michael and aldol chemistry; in research, methylheptenone isomers are employed as analytical standards and model odorants to probe olfactory mechanisms, and have been evaluated as components of insect lures or repellents for monitoring traps; additionally, its solubility and volatility support use as a perfume carrier, evaporation-rate modulator, and process intermediate in large-scale aroma and flavor manufacture.
