    (E)-Jasmone (CAS 68043-00-5) is a jasmine–herbal odorant with broad applications: as a fragrance ingredient in fine perfumery, cosmetics, detergents, and personal care to deliver natural jasmine, green, slightly woody facets and to enrich mid-to-base structure (typically at very low dosages, synergizing with jasmonates such as Hedione, and with linalool, ionones, and musks); as a flavoring in foods and beverages (jasmine tea, fruity profiles, confectionery, bakery) to enhance freshness and naturality; in agriculture and chemical ecology, jasmone and its isomers, including (E)-jasmone, are investigated as plant defense elicitors and semiochemicals to modulate pest behavior or support attraction of natural enemies, though activity can differ from (Z)-jasmone and is species- and context-dependent; as an analytical reference/sensory calibrant in GC–MS and trained panels to authenticate jasmine oil, tea, and hops; as a synthetic intermediate for jasmonate derivatives and as a tonal modifier in formulations; and, within safety/regulatory frameworks (e.g., IFRA guidance and jurisdiction-specific food-use limits), with attention to possible skin sensitization, tendency to oxidize/isomerize under light/heat, and storage in cool, well-sealed, light-protected conditions.
