    trans,trans-2,4-Decadienal (CAS 25152-84-5) is an unsaturated C10 aldehyde with the characteristic aroma of deep-fried foods, roasted chicken skin and ripe orange, making it widely used in the flavour and fragrance industry to enhance fatty, roasted, caramel and citrus notes in potato chips, savoury snacks, orange-flavoured beverages, soups, sauces, processed meats and seafood, while occurring as a trace component in woody-citrus perfumes; in food science it also serves as an analytical standard for monitoring lipid oxidation, shelf-life studies and burnt-odour diagnostics, supports sensory development for vacuum-frying and spray-drying technologies, and occasionally acts as a building block for synthesising C10 aldehyde-containing cosmetic and pharmaceutical intermediates.
