Applications
trans-2-Hexen-1-ol (CAS 928-95-0) is an aliphatic alcohol with a characteristic “green leafy” note and is widely used in the flavor and fragrance industry to recreate freshly cut grass, cucumber, green apple and other “fresh” nuances; it is formulated into perfumes, soaps, deodorants, scented candles, liquid seasoning, tobacco flavors, and is also employed as a flavor modifier in beverages, chewing gum, dairy products and savory snacks, as an intermediate for fruity ester synthesis, and as a natural sensory marker for monitoring the freshness of vegetables and fruit because it is released when plant tissues are damaged.
