    An unsaturated primary alcohol with a fresh green, fruity odor, (Z)-2-penten-1-ol (CAS 1576-95-0) is used in flavor and fragrance to impart leafy/green and ripe-fruit notes in beverages, confectionery, and baked goods; in fine fragrances, household cleaners, and deodorizers to boost freshness; as an intermediate to make 2-pentenyl esters (e.g., acetate, butyrate) and other derivatives for aroma ingredients; as a versatile building block in organic synthesis (epoxidation, hydroboration-oxidation, chain extension, stereodefined transformations of the C=C) toward pharmaceuticals, agrochemicals, and surfactants; as an analytical standard and odor marker in GC/GC-MS for studies of plant volatile organic compounds, environmental odors, and insect ecology; and occasionally as a laboratory solvent/reaction additive, noting its flammability and tendency to oxidize.
