Applications
Perillene (CAS 539-52-6) is a natural monoterpene with a distinctive herbal–citrus, perilla-like note, applied primarily in flavor and fragrance to add fresh green and slightly spicy nuances to beverages, confectionery, chewing gum, seasonings and sauces inspired by Asian profiles, as well as in fine fragrance, personal care, and home care (air-care sprays, candles, diffusers); in R&D and quality control it serves as a marker/reference standard for GC–MS profiling of Perilla frutescens essential oil and other monoterpene-rich botanicals, and as a convenient intermediate for synthesis/biotransformations (oxidation, epoxidation, Diels–Alder addition) to access aroma derivatives or functional ingredients; it is also being investigated for antimicrobial, insect-repellent, and malodor-control roles in greener formulations, and for stabilization/controlled-release approaches (microencapsulation, cyclodextrin inclusion) to manage volatility and oxidation, with use subject to applicable regulations (e.g., IFRA and local flavor/food rules) and typical terpene safety considerations (skin sensitization, peroxide formation on oxidation).
