    2-Hexenal (CAS 6728-26-3) is a C6 aldehyde with a fresh green leaf odor. In industry it is commonly used as a fragrance ingredient to impart green, herbaceous notes in perfumery and cosmetics, and may be used as a flavor note in limited food and beverage formulations under applicable limits. It also serves as an intermediate in aroma-chemical synthesis for access to other green-note compounds.
