    With its characteristic fresh green-leaf and light fruity odour, trans-2-Hexen-1-al (CAS 6728-26-3) is broadly utilized in flavour formulation to impart apple, cucumber, strawberry and tomato notes to beverages, dairy, ice cream, chewing gum, baked goods and tobacco, incorporated into perfumes, cosmetics and detergents for a natural outdoor nuance, employed as a GC-MS standard to monitor lipid oxidation and assess freshness of meat, olive oil and vegetables, and explored for its antimicrobial and insect-repellent activities in active food packaging and agrochemical products.
