Sedanolide (CAS 6415-59-4) is a celery-like phthalide occurring naturally in celery seed and lovage, widely used as a flavor ingredient to impart characteristic celery/lovage notes with green, herbal and slightly spicy nuances to soups, broths, sauces, savory snacks, seasonings, plant-based meats, tomato juice and savory cocktails; in fragrance and household applications it helps build green–vegetal, bouillon and spicy accords for soaps, detergents and personal care; in analytics and quality control it serves as an aroma marker/reference standard for celery seed oil to support flavor profiling, raw-material verification and studies on odor thresholds and stereoisomers; additionally, at R&D scale, sedanolide is employed as a versatile building block for preparing related phthalide derivatives and as a model compound for investigating flavor stability under heat, light and complex food matrices.
