Applications
Phenylacetaldehyde (CAS 122-78-1) is an important aromatic aldehyde widely used in the fragrance and flavor industry for its characteristic rose, honey and hyacinth notes; it imparts aroma to candies, baked goods, dairy products and soft drinks, serves as an intermediate in the synthesis of pharmaceuticals, agrochemicals, surfactants, dyes, resins and certain photofunctional compounds, and, being naturally present in cocoa, tea, coffee and various flowers, is also exploited in analytical studies of volatile food constituents and bio-flavors.
