    Fenchone (CAS 1195-79-5) is a bicyclic monoterpene ketone with a camphoraceous, herbal, mildly minty odor, used as a flavoring ingredient in foods and beverages (confectionery, baked goods, liqueurs, alcoholic and non-alcoholic drinks) to deliver fennel-like freshness; as a fragrance note in perfumes, toothpastes, mouthwashes, soaps, detergents, and household products for a clean-cool effect; in aromatherapy and fennel essential-oil products for air-freshening and deodorizing; as a chiral building block/starting material in asymmetric synthesis and as an odor/analyte standard for GC/GC-MS, sensory training, and analytical method development; investigated for antimicrobial, antifungal, and insect-repellent properties and for use in natural preservation or botanical pest-control formulations; and widely employed as a model chiral ketone in physical chemistry and spectroscopy studies (CD, VCD, PECD); use should follow safety guidelines due to irritancy and potential neurotoxicity at high doses.
