Applications
3-Hexenyl hexanoate, (3Z)- (aka Z-3-hexenyl hexanoate; CAS 31501-11-8) is a green–fruity ester (fresh-cut grass, crushed leaves, apple, pear, banana, pineapple) widely used to impart fresh, natural top notes: in flavors for beverages, juices, confectionery, baked goods, yogurts, and chewing gum; in fragrances for fresh accords in fine perfume, shampoos, soaps, detergents, candles, and air care, where it boosts citrus, herbal, and green-fruity facets, masks sulfur/fatty off-notes, and adds blooming top-to-mid impact; it is dosed at very low levels (ppb–ppm), is soluble in ethanol and oils, sparingly soluble in water, and is sensitive to oxidation and Z/E isomerization, thus stored cool and dark, optionally with antioxidants; in agro/biological research it serves as a representative green leaf volatile for plant-signaling and insect-behavior studies, as a lure/behavioral cue, and as a GC/MS reference standard; it is available in natural-grade via esterification from natural precursors and is used within applicable safety guidelines and industry standards.
