    2,4-Decadienal (CAS 2363-88-4) is a powerful aroma aldehyde with fried, fatty, chicken and citrus-peel notes, used at very low levels as a flavor ingredient to impart deep-fried/roasted character to potato snacks, popcorn, instant noodles, soups, sauces, seasonings, margarines and seafood flavors; in fragrance and savory aroma design it provides warm fatty, aldehydic–citrus nuances for kitchen, roasted-meat and certain citrus profiles; in food quality control it serves as a key marker of lipid oxidation and frying oil deterioration and as an analytical standard (GC/GC–MS, GC–O, SPME) and sensory reference; in research it is also studied for antimicrobial/algicidal bioactivity and as a potent natural impact compound occurring in coriander, fish, heated vegetable oils and roasted meats, supporting product development and optimization of frying processes.
