trans-2-Nonenal (CAS 18829-56-6) is an unsaturated aldehyde responsible for the characteristic “aging odor” of human skin and is broadly applied in fragrance and food industries as a “cucumber” or “toasted bread” note, used as a freshness indicator and age marker in beer because it arises from fatty-acid oxidation, supports monitoring of flavor stability in oils, milk powder and packaging paper, assists in fault-odor analysis during recycled-paper processes, serves as an intermediate for synthesizing insect pheromones, underpins dermatological studies of skin aging to aid development of anti-aging cosmetics, and is employed in odor-control systems for air-conditioning as well as in electronic-nose sensor arrays for rapid odor identification.
