    2-Furyl methyl ketone (also known as 2-acetylfuran) is a pale yellow flavour chemical with a sweet, caramel-like odour that is widely used in the food industry to recreate the roasted notes of coffee, baked bread, chocolate, honey and ripe fruits; in beverages to refine the aroma profile of wines, specialty beers and soft drinks; in cosmetics and perfumery as a warm, delicate note that rounds woody and resinous accords; in pharmaceuticals and fine chemistry as an intermediate for the synthesis of thiamine (vitamin B1), furfuryl alcohol, and pyrazole, triazole or furanone derivatives exhibiting antibacterial, antifungal or anti-inflammatory activity; additionally, it serves as an odourant for gas-leak detection, a component of UV-curable coatings, a monomer in furan resins, and an analytical standard for natural flavour research.
