  • Ứng dụng

    Acetoin, còn gọi là 3-hydroxy-2-butanone (CAS 513-86-0), là một hợp chất hương vị tự nhiên quan trọng với mùi bơ dịu, được sử dụng rộng rãi làm chất tạo hương trong bánh kẹo, sữa chua, bơ thực vật, đồ uống, cà phê hòa tan và cả trong dung dịch thuốc lá điện tử; đồng thời nó xuất hiện tự nhiên trong quá trình lên men của nhiều vi sinh vật nên được ứng dụng như chất chỉ thị sinh học và là phụ gia nâng cao hương vị cho sản phẩm lên men như bia, sữa, kim chi; trong mỹ phẩm acetoin góp phần tạo hương thơm cho kem dưỡng, son môi, nước hoa và làm chất điều chỉnh nốt hương cho hương liệu phức tạp; trong dược phẩm nó là tiền chất tổng hợp một số hoạt chất chứa vòng pyrazine, được nghiên cứu như chất truyền tín hiệu trong vi sinh vật và chất ức chế mùi; về công nghiệp, acetoin là dung môi hòa tan cellulose, nhựa và nitrocellulose, là monomer hoặc phân tử đầu cho tổng hợp polyme thân thiện sinh học, được dùng để tạo dung dịch tẩy rửa bán dẫn, làm tác nhân chống đông và cải thiện hiệu suất lên men công nghiệp sản xuất butanediol, đồng thời là thành phần trong mực in, chất phủ, thuốc diệt côn trùng sinh học, giúp giảm độc tính và tăng hiệu quả phóng thích hoạt chất.
