Applications
trans-2-Methyl-2-butenal (also known as 3-methylcrotonaldehyde) is an α,β-unsaturated aldehyde with a grassy-fruity odor that finds broad use as a flavoring agent in foods, beverages and tobacco, as a fragrance component in perfumery and personal-care products, and as a versatile intermediate for the synthesis of vitamins, pharmaceuticals, agrochemicals, resins and specialized heterocycles; it is furthermore employed as an analytical reference standard, an olfactory marker in sensory research and a reactive building block in laboratory-to-industrial chemical processes, with applications regulated under FEMA/GRAS and IFRA guidelines, and it should be stored cool and protected from light and oxidation to maintain purity.
