    Propionic acid (CAS 79-09-4) is a straight-chain, three-carbon organic acid widely employed as an anti-mold preservative for bread, cheese and baked goods, a microbiological control additive for animal feed and stored grain, an intermediate in pharmaceutical synthesis, a post-harvest fungicide and bactericide, a pH adjuster in beverages, a solvent in the manufacture of cellulose acetate propionate plastics, an initiator for acrylic polymerization, a mild flavor ingredient, a flame-retardant enhancer for chlorinated solvents, as well as a cleaning agent, rubber stabilizer, metal rust remover additive, and a versatile building block for herbicides, fragrances and dyes.
