(E,Z)-2,4-Decadienal (CAS 25152-83-4) is an unsaturated aldehyde with an exceptionally potent fried, chicken-fat, citrus-peel, green and fatty character; it is widely used as a flavor ingredient to add and boost fried and citrus notes in instant-noodle seasonings, soups and broths, potato chips and extruded snacks, popcorn, roasted nuts, processed meats, seafood, baked goods, dairy matrices and citrus-flavored beverages, and to standardize or fine-tune the aroma profile of frying oils, margarines and sauces; in perfumery and home/personal care it contributes aldehydic-citrus and fatty-waxy facets that brighten top notes in orange, grapefruit, lemon and lemongrass accords and in soaps and detergents at very low dosages; in analysis and quality control it serves as a reference standard and a lipid-oxidation marker from linoleic acid to assess rancidity in edible oils, monitor the quality of frying systems, study shelf life and sensory drivers of fried foods, milk powders and seafood, and to calibrate GC-MS/GC-O methods and odor sensors; it is also leveraged in flavor and chemosensory research as a key impact compound that strongly influences odor thresholds and the aromatic structure of seasoning systems.
