Ethyl sorbate (CAS 2396-84-1) is the ethyl ester of sorbic acid and is utilized as an antifungal preservative in foods, beverages, dairy products and sauces, imparts a subtle fruity note to candies, chewing gum and baked goods, serves as a flavour-fixing agent in perfumes and tobacco, functions as a polymer stabilizer, corrosion inhibitor, cosmetic and pharmaceutical additive, and acts as an intermediate in diverse chemical synthesis processes.
