Dodec-4-en-1-al (CAS 30390-51-3) is an unsaturated long-chain aldehyde widely used in flavors and fragrances to impart clean aldehydic freshness with citrus peel, green, and fatty–waxy facets in perfumes, soaps, detergents, personal care, and deodorizers; in food flavoring it lifts top notes and provides orange/lemon peel and cucumber–herbal nuances for beverages, confectionery, and baked goods at trace levels; in organic synthesis it serves as a versatile building block that can be reduced, oxidized, converted to Schiff bases (imines), or transformed via epoxidation/hydroboration to give alcohols, acids, and other derivatives, making it a useful intermediate for aroma ingredients, additives, and pharma/agrochemical precursors; in R&D it is used as a reference/standard for long-chain unsaturated aldehydes in GC/GC-MS, in studies of lipid-oxidation volatiles, and as a sensory reference for aldehydic notes; its strong odor at very low dosage also suits microencapsulation and controlled-release systems in laundry and air-care products.
