Applications
Cinnamaldehyde (CAS 104-55-2), the principal flavor component of cinnamon, is widely used as a flavoring agent in confectionery, bakery products, beverages, and chewing gum; as a warm, spicy note in perfumes and cosmetics; as a pharmaceutical excipient that masks unpleasant tastes and provides natural antimicrobial and antifungal activity; as an agricultural insect repellent and post-harvest fungicide; as a stabilizer and corrosion inhibitor in plastics and rubber; and it is actively studied for its potential anti-inflammatory, antioxidant, anticancer, and glucose-modulating effects, as well as serving as a versatile intermediate for the synthesis of advanced organic compounds.
