Applications
3-Nonen-2-one (CAS 14309-57-0) is a linear unsaturated ketone used mainly in flavor and fragrance applications to deliver green, fruity cucumber–melon, slightly citrus-peel and fatty nuances: blending in fine fragrances and personal care, odor standardization in detergents/deodorizers, and flavoring of foods/beverages (e.g., confections, baked goods, dairy, fruit-flavored drinks) at trace levels; in research it serves as a reference/standard for GC–MS and sensory studies, and as a versatile synthetic building block thanks to its carbonyl and C=C bond (reduction to 3-nonen-2-ol or to amines via reductive amination, epoxidation of the double bond, participation in Michael/aldol reactions, or chain extension), enabling derivatives for aroma chemicals, pharmaceutical/agrochemical intermediates, and specialty materials; it is also explored in microencapsulation and controlled-release systems for packaging and household care.
