2-Octen-4-one (CAS 4643-27-0) is an unsaturated straight-chain ketone with a distinctive truffle-like, buttery, woody and nutty odor, making it a valued flavor additive in instant soups, snacks, sauces, plant-based meat, and fermented beverages; in perfumery it contributes a unique earthy-green nuance to fougère and woody accords and serves as a sensory reference standard for GC-MS calibration in aroma analysis; industrially, its conjugated C=C system makes it a versatile intermediate for semi-synthetic pheromones, vitamin derivatives and α,β-unsaturated aldehydes, while in academia it is frequently employed as a model substrate in studies of Michael addition, selective reduction and hydroformylation reactions.
