    2-Ethyl-3,5-dimethylpyrazine (CAS 13925-07-0) is a potent roasted, nutty, cocoa/coffee-like pyrazine with an extremely low odor threshold, used primarily as a flavor ingredient to impart or intensify roasted/toasted notes in coffee, cocoa and chocolate, nuts, baked goods, snacks, savory seasonings, meats and meat analogs; it is incorporated into Maillard reaction flavors and top-note blends for sauces, soups, instant noodles, snacks, tobacco and beverages, and is often microencapsulated to improve stability and control release; it also serves as an aroma marker and analytical reference standard in GC-MS/GC-O for research, aroma recombination and quality control of roasted profiles, as well as a spike for sensory panel training; it may be used as a building block for related pyrazine derivatives; food applications require compliance with local regulations and very low dosage due to its high potency.
