    Apiole (dill), CAS 484-31-1, là một phenylpropanoid tự nhiên hiện diện trong tinh dầu thì là và một số loài họ Hoa tán; trong hương liệu–thực phẩm được dùng ở mức vết để tạo sắc thái ấm, thảo mộc và cay cho gia vị, đồ uống, bánh nướng; trong nước hoa/mỹ phẩm giúp củng cố nốt xanh–thảo mộc và làm chất sửa mùi; trong y học cổ truyền, các chế phẩm giàu apiole từng được dùng như chất giảm co thắt, carminative và emmenagogue, nhưng ứng dụng điều trị hiện đại bị hạn chế do nguy cơ độc gan–thận, kích thích thần kinh và độc tính sinh sản khi dùng liều cao, vì vậy chủ yếu được sử dụng như chất tham chiếu/chuẩn phân tích và hương liệu tuân thủ giới hạn an toàn; trong nghiên cứu, apiole và dẫn xuất được khảo sát về đặc tính chống oxy hóa, kháng khuẩn–nấm, kháng ký sinh trùng, chống viêm, bảo vệ thần kinh, cũng như tác dụng xua/diệt côn trùng (ví dụ ấu trùng muỗi), đồng thời làm chỉ dấu hóa thực vật và chất tham chiếu trong hồ sơ GC–MS/HPLC của tinh dầu; tổng thể, giá trị ứng dụng của apiole tập trung ở vai trò vi lượng trong hương–vị, công cụ phân tích và nền tảng tạo dẫn xuất, kèm yêu cầu kiểm soát chất lượng và tuân thủ quy định nghiêm ngặt.
