Fructone (CAS# 6413-10-1), also known as Ethyl 2-(2-methyl-1,3-dioxolan-2-yl)acetate, is a synthetic aroma chemical belonging to the fruity fragrance family. It features a powerful, fresh, and vibrant fruity aroma with prominent notes of green apple, ripe pineapple, and strawberry, complemented by subtle green and sweet pine-like nuances.

In perfumery, Fructone is widely used to create fresh, juicy fruit effects and enhance the overall diffusion of fragrance compositions. It blends particularly well with Fruity, Fruity Floral, Green, and Tropical accords, adding a youthful, lively, and natural character to fragrances.

Fructone is suitable for various applications, including fine fragrances, shampoos, soaps, fabric conditioners, and personal care products. It offers good diffusion, a reported blotter longevity of over 12 hours, and good stability in perfumes and fabric conditioners. However, its stability may be reduced in highly alkaline formulations, particularly powder detergents.
