Octanal, also known as Aldehyde C-8 or caprylic aldehyde (CAS Number: 124-13-0), is an organic compound belonging to the aliphatic aldehyde family. Under standard conditions, the product is a colorless or slightly yellow clear liquid. In nature, Octanal occurs widely in over 180 foods and beverages, and is particularly abundant in citrus essential oils (sweet orange, bitter orange, mandarin, tangerine, grapefruit, lemon) as well as in rose, lemongrass, and apples.

Regarding its organoleptic properties, Octanal carries an aldehydic odor mixed with nuances of citrus, wax, fat, and green herbal notes. In its pure form, this compound has a rather harsh and pungent odor, but when diluted (typically to 1% or less), it transforms into a fresh, sparkling, and highly pleasant citrus peel fragrance. The diffusive power of Octanal is extremely strong, helping to bring clarity and provide an excellent lift to the top notes of fragrance formulations.

This product is highly applicable and versatile in both the fragrance and flavor industries. In perfumery, Octanal acts as a top note modifier to create realistic citrus accords, or to provide a "lifting aldehydic" effect for floral bouquets (such as rose, jasmine, muguet), and is widely used in functional products like soaps, shampoos, and detergents. In the food industry, it is a safe flavoring agent used to add freshness to bakery products, beverages, ice cream, and gelatins.

Physicochemically and regarding storage, Octanal is a flammable liquid (flash point 51.6°C) and insoluble in water, but it is highly soluble in alcohol and oils. An important characteristic to note is that this compound is highly susceptible to autoxidation when exposed to air, forming octanoic acid (which changes the fresh scent to a sour, rancid odor). To counteract this, commercial products are usually stabilized with antioxidants (such as α-tocopherol/Vitamin E). It is necessary to store Octanal in a cool, dry place (under 30°C), avoiding exposure to high temperatures and direct light, and ideally, it should be tightly sealed under a nitrogen blanket to maintain a stable odor quality. Additionally, direct contact with the skin or eyes at high concentrations should be avoided, as this chemical can cause irritation.
