2-Methyl-2-Pentenoic Acid, commonly known in the market by names such as Strawberriff or Strawberry acid, is a breakthrough ingredient in the recreation of fruity aromas. Naturally derived and found in strawberries, blueberries, and certain cheeses, this material was developed in synthetic form to solve a major limitation in fragrance formulation. Before its introduction, strawberry accords often smelled merely sweet and candy-like because they relied almost entirely on esters. The addition of 2-Methyl-2-Pentenoic Acid brought a sharp acidic facet that made the aroma far more realistic and vibrant.

Description

Appearing as an oily liquid ranging from colorless to pale yellow, it gives off a pungent sour odor characteristic of strawberry and fruit jam, sometimes with a slight cheesy nuance when smelled at high concentration. Belonging to the fruity odor group and the sour olfactory family, this material functions mainly in the top note, with very strong odor impact, although its lasting power on a blotter is only about 1 to 2 hours. In formulas, it serves as a highly effective modifier, helping to balance the sweetness of other ingredients and bringing a natural juicy impression to strawberry, raspberry, or pineapple accords. One of the most common pairings is with Aldehyde C-16, Furaneol, and Ethyl butyrate to build a complete strawberry structure. Because of its extremely strong and harsh odor profile, perfumers must dilute it in safe solvents such as DPG or TEC at 1% or 0.1% to control the dosage more easily.

Applications

In terms of applications, 2-Methyl-2-Pentenoic Acid is widely used in the food, perfume, scented candle, soap, and skincare industries. According to IFRA standards, it is not subject to strict restriction, but in practice it is usually used only at 0.01% to 1% of the total fragrance concentrate. Although it is not known for phototoxicity and does not require allergen declaration on labels, special care is still necessary when handling the pure material, since its acidic nature may cause irritation and skin burns. Thanks to its ability to create a natural sour effect, this ingredient has become indispensable in strawberry-flavored candies, soft drinks, and in bath and body products featuring realistic fruity scents.
