Applications
3-(Methylthio)-1-propanol, also known as methionol, is a valuable organosulfur compound widely applied in the flavor and fragrance industry for imparting cooked onion, garlic, roasted meat and matured wine notes, and is simultaneously employed as an analytical standard for GC-MS calibration, as a precursor for sulfide or phosphorous-containing derivatives, for probing aroma-formation mechanisms during beer and wine fermentation, for quality control of roasted coffee, for Maillard reaction studies in food science, for tailoring sensory profiles of non-alcoholic beverages, for simulating human body odor in deodorant evaluations, and for isotope-labeling experiments that trace methionine metabolism; moreover, thanks to its good solubility in organic solvents and convenient boiling point, this molecule is exploited as a niche reaction medium and methylthio-transfer reagent in pharmaceutical synthesis laboratories.
