    3-Hexenyl propionate, (3Z)- (CAS 33467-74-2) is a green–fruity ester (fresh-cut grass, apple, pear) widely used as a flavor and fragrance ingredient: in flavors to add fresh, juicy, natural nuances to beverages, juices, soft drinks, confectionery, baked goods, dairy/ice cream, and chewing gum, and to build fruit profiles (apple, pear, berry, melon, tropical) and green vegetable notes (cucumber, tomato leaf), typically at trace levels to lift top notes, balance sweetness, and mask off-notes; in perfumery, personal care, detergents, air care, and fabric care to deliver a natural leafy/green effect that bridges green and fruity facets in accords such as muguet, tea, fig, and apple–pear, functioning as a top-to-middle note; in labs and R&D it serves as a reference/analytical standard for GC–MS, for sensory training, and as a model “green leaf volatile” in plant-aroma studies; in practice it is dissolved in ethanol/propylene glycol, dosed at ppm levels, and combined with cis-3-hexenol and hexyl acetate to enhance naturality, while complying with applicable safety guidelines and use limits.
