Applications
2-Pentadecenal (CAS 64462-00-6) is a long-chain unsaturated aldehyde applied broadly: (1) in flavor and fragrance development to impart fatty-green, waxy, slightly citrus and marine notes to perfumes, soaps, detergents and, where permitted, certain flavored food formulations at trace levels; (2) as a semiochemical/pheromonal component in lures for insect behavioral research and ecologically based pest monitoring and management; (3) as an analytical reference in GC/GC-MS/LC-MS to quantify unsaturated aldehydes and to study lipid oxidation, off-flavor formation and flavor stability; (4) as a versatile synthetic building block, with its alpha,beta-unsaturated aldehyde enabling Michael addition, aldol chemistry, reductions or oxidations to alcohols/acids, and imine (Schiff base) formation toward higher-value pharmaceutical and agrochemical intermediates; (5) for surface or biopolymer functionalization via Schiff-base coupling in sensors, antimicrobial materials and bioconjugation/immobilization; (6) as a model electrophile in biochemical studies to probe glutathione/protein adduction, aldehyde dehydrogenase activity and cellular detoxification pathways.
