    (2Z)-2-Hexenal (cis-2-hexenal; CAS 16635-54-4) is an alpha,beta-unsaturated aldehyde with a characteristic green, leafy, apple-like odor used broadly as a flavor and fragrance ingredient to impart fresh green notes in foods and beverages (confectionery, chewing gum, baked goods, soft drinks, apple–pear applications, vegetable–herb profiles), in perfumes, cosmetics, and deodorizers; it also serves as an organic synthesis intermediate and an analytical reference standard (GC/GC-MS) for studies of plant volatiles; owing to its natural antimicrobial, antifungal, and insect-repellent activity, it is investigated or applied in food packaging and postharvest treatments, bio-based lures or repellents, and as a model signaling compound for green leaf volatiles in plant defense research.
