    2-Decenal (CAS 25447-70-5) is a long-chain unsaturated aldehyde with a coriander–citrus, green–fatty odor, widely used as a flavor ingredient in beverages, confectionery, baked goods, dairy analogs and savory seasonings, and in perfumery, soaps, detergents and household cleaners to impart fresh citrus/green notes; in organic synthesis it serves as a versatile building block for reductions/hydrogenation, oxidation, epoxidation, Schiff-base and aldol reactions to access allylic alcohols, unsaturated acids, epoxides and intermediates for fragrance, pharmaceutical and agrochemical manufacture; in food science and quality control it is employed as a GC/GC–MS standard and as a marker of lipid oxidation (rancidity) in oils, meats and snacks, and the inherent antimicrobial/antifungal tendencies of unsaturated aldehydes are being explored for active packaging, antimicrobial coatings and bio-based preservative systems.
