  • Ứng dụng

    4-Hydroxy-2,5-dimethyl-3(2H)-furanone (thường gọi là furaneol) là hợp chất hương vị quý giá được tìm thấy tự nhiên trong dâu tây, dứa, cà chua và nhiều loại trái cây chín khác; trong công nghiệp thực phẩm, nó được dùng làm chất tạo hương ngọt ngào, caramel và kẹo bông, gia tăng chiều sâu cảm quan cho bánh kẹo, đồ uống, sữa chua, nước tăng lực, cà phê rang, bia hoa quả, đồng thời hỗ trợ che lấp mùi kém dễ chịu của chất tạo ngọt nhân tạo; ngoài ra, trong mỹ phẩm và nước hoa, furaneol góp phần tạo nốt hương trái cây tươi, nâng cao cảm giác ngọt dịu, còn trong nghiên cứu y sinh, nó được khảo sát như chất chỉ thị quá trình Maillard và chất chống oxy hóa tiềm năng cho công thức bảo quản thực phẩm.
