    cis-β-Sinensal (CAS 17909-87-4) là một aldehyde mùi cam tự nhiên trong tinh dầu vỏ cam, được ứng dụng chủ yếu làm chất tạo hương và mùi: trong thực phẩm–đồ uống (tăng cường và “tự nhiên hóa” các nốt cam/quýt/mandarin cho nước giải khát, kẹo, sản phẩm sữa và bánh nướng ở mức vi-ppm), trong nước hoa và hương kỹ thuật (xây dựng top note citrus tươi, mang sắc thái vỏ cam ngọt hơi sáp cho eau de cologne, body mist, xà phòng, dầu gội, chất tẩy rửa, nến, sáp thơm và máy khuếch tán; giúp che lấp mùi nền của công thức gia dụng), đồng thời làm chất chuẩn GC–MS/HPLC cho kiểm nghiệm chất lượng, giám định tính xác thực tinh dầu/hương cam và nghiên cứu cảm quan tái cấu trúc hương; vì là aldehyde hoạt tính nên cần bảo quản mát, tránh ánh sáng/oxy/kim loại, đóng gói kín (có thể khí trơ), tối ưu pH và tương hợp công thức, và sử dụng tuân thủ quy định hương liệu–thực phẩm hiện hành (ví dụ IFRA và tiêu chuẩn địa phương).
