    Vanillyl alcohol (4-hydroxy-3-methoxybenzyl alcohol, CAS 498-00-0) is an aromatic compound obtained by reducing vanillin, and it finds diversified applications: as a flavouring agent it imparts a warm, sweet vanilla-like note to chocolate, instant coffee, dairy desserts, chewing gum and beverages; as a fragrance ingredient it lends softness, depth and oxidative stability to perfumes, soaps, shampoos, lotions and scented candles; in cosmetics it functions as a masking and antioxidant additive that protects oils and fragrances from rancidity; in organic synthesis it serves as a versatile building block for capsaicinoids, benzoxazine resins, anti-inflammatory or neuroprotective pharmaceuticals and various enzyme inhibitors; in materials science it is employed as a monomer or modifier for epoxy, polyurethane and polycarbonate resins to improve flexibility, UV absorption and thermal behaviour, and as an intermediate for colourants, dyes and bio-based polymers; moreover it acts as a radical scavenger in food packaging films and as an analytical standard in microbiological and lignin-valorisation studies.
