    Tripropionin (CAS 139-45-7), also known as glycerol tripropionate, is a short-chain triglyceride valued across diverse sectors from food technology to biochemical research: owing to its faint buttery note and low volatility, it serves as a flavor carrier, texturizer and solvent for aroma concentrates in confectionery, bakery and beverage formulations; its efficient plasticizing ability enhances flexibility, tensile strength and crack resistance of cellulose acetate, nitrocellulose and other bio-derived polymers; in cosmetics it functions as an emollient that leaves a silky skin feel and boosts the stability of oil-in-water emulsions; in pharmaceuticals it is exploited as an oily phase for nano- and microspheres designed for controlled release of poorly water-soluble drugs; moreover, lipid scientists employ Tripropionin as an internal standard for chromatographic quantification of short-chain triacylglycerols or as a model substrate when probing lipase-catalyzed hydrolysis kinetics.
