Sucrose octaacetate (CAS 126-14-7) is a fully acetylated sucrose ester with an intensely bitter taste, widely employed as a bitterant and aversive agent in anti-nail-biting lacquers, inks, consumer electronics and children’s products, as an industrial alcohol denaturant, a feed additive to deter pecking or chewing in livestock, a pharmaceutical tool for bitterness-threshold testing and smoking-cessation aids, a biological research deterrent in insect feeding studies, a chiral stationary phase in gas chromatography, and also functions as a synthetic intermediate, plasticizer additive and flavor modulator in chewing gum or prototype beverages thanks to its thermal stability, low toxicity and good biodegradability.
