    Potassium Metabisulfite (CAS 16731-55-8) is used primarily as a source of sulfur dioxide (SO2) for preservation and antioxidant protection in foods and beverages (notably wine, fruit juice, and dried fruit); it also acts as a reducing agent and antioxidant in chemical manufacturing and in some polymer/plastics formulations; it is employed as a dechlorinating agent in water treatment and to quench residual chlorine; and it serves as a source of SO2 for bleaching in pulp, paper, and textile processing.
