Polygodial (CAS 6754-20-7) is a naturally occurring sesquiterpene dialdehyde whose spicy, peppery aroma and reactive dialdehyde functionality underpin several industrial uses. It is commonly evaluated as an odorant/fragrance ingredient in perfumery and cosmetic formulations, and may be used as a flavor component in natural food and beverage applications where permitted.
