α-Amylcinnamaldehyde (CAS 122-40-7) is a key fragrance ingredient with a sweet, jasmine-like, fruity-spicy odour that is extensively employed in fine perfumery, soaps, household detergents, personal-care formulations, scented candles and air fresheners; in the food industry it is used at trace levels to impart floral and fruity nuances to confectionery, baked goods and beverages, subject to IFRA recommendations and EU allergen labelling rules; beyond its primary odour contribution the molecule acts as a modifier, extender and fixative that rounds off harsh notes, masks chemical off-odours, offers mild antimicrobial activity, shows high stability in alkaline media and can be micro-encapsulated to provide controlled, long-lasting release of fragrance.
