    p-Mentha-8-thiol-3-one (CAS 33281-91-3) is a sulfur-containing monoterpene with an extremely powerful odor and ultra-low detection threshold, used primarily as a high-impact flavor/fragrance ingredient to boost grapefruit, citrus, minty, green-herbal, tropical (passionfruit, blackcurrant), and hop-like notes in beverages, beers, RTD cocktails, confectionery and chewing gum; in niche perfumery and home-care top notes at trace levels to impart natural citrus freshness and diffusion; in sensory science and analytical chemistry as a reference/spiking standard for panel training, method validation, and studying thiol precursors and release during fermentation; and in flavor–fragrance R&D, typically handled as dilute solutions due to easy oxidation to disulfides, with microencapsulation or inert-atmosphere storage to improve stability.
