Methyl (Z)-5-octenoate, CAS 41654-15-3, also known as methyl cis-5-octenoate, is an unsaturated straight-chain ester widely used in the flavour and fragrance industry to deliver fresh green, tropical fruity and marine waxy notes to perfumes, soaps, deodorants and baked goods, while serving as a key intermediate for the synthesis of pineapple-, peach- and banana-like alkylates and insect pheromone blends (notably for moths, fruit flies and weevils) employed in eco-friendly trapping systems; in oenology and food science it acts as an aroma modifier for wines and beverages, and in research and organic synthesis its reactive cis double bond and ester group make it a versatile building block for metathesis, epoxidation, Suzuki cross-coupling and other transformations leading to pharmaceuticals, specialty surfactants, functional polymers, bio-based coatings, as well as a GC-MS reference standard for unsaturated fatty acids and related esters.
