Applications
Isobutyl 2‑methylbutyrate (CAS 2445‑67‑2) is a fruity, fresh-smelling flavor ester (evoking apple, pear, strawberry, peach, pineapple) widely used at trace levels to boost juiciness, brightness and naturality in fruit profiles, to build or reinforce apple/pear notes and bridge green to sweet facets in carbonated and nonalcoholic beverages, energy drinks, flavored alcoholic drinks, confectionery, chewing gum, syrups, jams, dairy and cultured products, ice creams, bakery fillings and spray‑dried or encapsulated flavor premixes; in fragrance applications it provides diffusive, sparkling fruity top notes for fine fragrance, soaps, shampoos, body washes, fabric and home care, air care sprays, candles and reeds, softening harsh green/resinous edges and enhancing freshness; in R&D and manufacturing it serves as a sensory reference and GC analytical standard, in microencapsulation/controlled‑release trials for dry mixes and beverages, is compatible with alcoholic bases and most aqueous systems when properly emulsified, requires attention to volatility and oxidative stability, and is used in compliance with applicable food‑flavor and fragrance regulations.
