    Hexyl isovalerate (hexyl 3-methylbutanoate, CAS 10032-13-0) is a fruity, sweet, fresh, slightly tropical-smelling ester widely used as a flavoring agent in beverages (soft drinks, low-alcohol drinks, juices), confectionery (hard candy, gummies, chewing gum), dairy (yogurt, ice cream), baked goods, and savory snacks to build and lift apple, pear, banana, pineapple, and berry notes, enhance juiciness and clean finish, and mask off-notes; in fine fragrance and home/personal care (shampoos, body washes, soaps, detergents, fabric softeners, air care, candles) it serves as a top-to-mid note ingredient that boosts fruity brightness, rounds green–fruity and tropical accords, and blends well with esters, aldehydes, lactones, and terpenes; it is also used in aroma QC and analytical work (GC/GC-MS reference), research on encapsulation and flavor release in food matrices, and in fruity oral-care flavors; typically dosed at very low levels due to high impact, generally stable in normal formulations but susceptible to hydrolysis under strong acid/base or prolonged heat, and its use should comply with applicable food and fragrance regulations.
