    γ-Heptalactone (CAS 105-21-5) is a coconut-, creamy- and ripe-fruit-scented γ-lactone widely employed as a flavour ingredient in confectionery, beverages, dairy products and instant coffee; as a perfumery, soap, shampoo, deodorant and scented-candle note to impart warm sweetness; as a palatability enhancer in premium animal feed; as a GC/MS reference standard for quantifying natural aroma compounds; and as an intermediate in studies on lactone ring-opening, biodegradable polymer synthesis and sensory science, while meeting FEMA, IFRA and EU flavour regulations, making it popular throughout both the aroma industry and academic laboratories.
